Financiers French Cakes

I was reading about this french petite cakes, called Financiers(which, by the way, I didn't know they existed!)and wondered how to make them. I found them for the first time in a very original, trendy and relaxing website, called The Pink Tea Room, which is written kind of diary-style and has many insightful quotes, but it had this article about financiers, which led me to search more and find this recipe for all of you who might want to explore. Goes like this:

Ingredients (makes 4 servings)

200 grams (7 oz) plain flour
200 grams (7 oz) icing sugar
150 grams (7 oz) unsalted butter + a few more for the tins
100 grams (3.5 oz) finely ground almonds
50 grams (2 oz) sliced almonds + 4 eggs whites + salt.

1) Melt the butter. Let it cool.
Mix the flour, the sugar, the ground almonds and a pinch salt in a salad bowl.
2) Dig a shaft. Add the egg whites. Mix. Add the melted butter.
Mix vigorously.
3) Butter the tins. Evenly pour the pastry in them, then spread with
the sliced almonds.
4) Bake in preheated oven at 180°C / 350°F for
25 minutes. Let it cool down 3 minutes and take them out from the tins. You're done!!

Enjoy your day!
